Different brands of goats' milk brie can vary quite a bit. typically, however, there is a slight tanginess to goats' milk brie and the texture can be gooey rather than runny. in many cases, goat milk brie is milder and less stinky than a ripe cows' milk brie.. Hi, i tried making goat milk brie for the first time but just threw it out. it took nearly two weeks at 10*c and another week at 13*c for the mould to cover the whole cheese. the sides got good cover early but the top and bottom took ages.. Cheese, cheese, what a pleasure to eat and often to smell. as we have goat�s milk (more then we need for our soap) , i decided to try making cheese!!.
